VEG BIRYANI



Everyone knows biryani is famous in Hyderabad. people love to eat biryani.

Veg biryani is a mixture of vegetables and basmati rice. It is cooked as a Hyderabadi biryani but with vegetables. it is especially for veg people who do not eat non-veg food.

                                 Ingredients for vegetable marination

·       Cauliflower-11/2

·       Beans-1cup

·       Green peas1/2cup

·       Carrots-1cup

·       Curd-1 cup

·       Coriander powder 1 tsp

·       Cumin powder 1/2 tsp

·       Biryani masala 1 tbsp

·       Salt to taste

·       Turmeric powder-1/2 tsp

·       Red chili powder-1 tsp

·       Ginger garlic paste-2 tbsp

·       Chopped coriander leaves1/2cup

·       Chopped mint leaves-1/2 tsp

·       Green chilies-2

·       Fried onions-1/2 cup

                                          Ingredients for rice

1.    Basmati rice 2 cup

2.    Green cardamom-4

3.    Black cardamom-1

4.    Bay leaves-2

5.    Cinnamon sticks1

6.    Star anise(chakker phul)

7.    Lemon slices-3

8.    Water 2ltr

9.    Black peppercorns-5

10. Shahi jeera-1 tsp

11. Oil-1 tsp

                                          For biryani assembling

12.                       Fried cashew 10-15

13.                       Fried raisons 25-0

14.                       Fried onion handful

15.                       8-10 Saffron strands, soaked in one tsp warm milk

16.                       Rose water-1/2 tsp

17.                       Ghee 1 ½  tsp

18.                       8-10 mint leaves (handful)

19.                       Oil-1/4 tsp

20.                       Green cardamom-4-5

21.                       Black cardamom-1

22.                       Bay leaves-2

23.                       Star anise-1

24.                       Black peppercorns-5

25.                       Shahi jeera-1 tsp

26.                       Onion-1chopped

 

 

             PREPARATION OF MARINATED VEGETABLES

Ø Take one bowl.

Ø Put carrots, cauliflower, green peas, and beans.

Ø Add curd,red chilli,salt,turmeric powder, Coriander powder,biryani masala,cumin powder,ginger paste.

Ø Add mint leaves, coriander leaves, and green chili.

Ø Add fried onion.

Ø Mix everything well and keep aside.

 

 

                                  Preparation of rice

·       Soak the basmati rice first.

·       Take one pan and add Water 2ltr in it for boiling rice.

·       Add Green cardamom-4, Black cardamom-1, Bay leaves-2,   Cinnamon sticks1, Star anise(chakker phul) ,Lemon slices-3, Black peppercorns-5, Shahi jeera-1 tsp, Oil-1 tsp.

·       Add soaked rice in it.

·       Boil for 10-15minutes.

·       Strain the rice using a strainer and keep aside.

 

                              Preparation for biryani masala

1.    Take one pan.

        Add oil when oil is hot then add spices.

2.    Add Green cardamom-4, Black cardamom-1, Bay leaves-2, Cinnamon sticks1, Star anise(chakker phul) , Black peppercorns-5, Shahi jeera-1 tsp.

3.    When these spices are fried then add chopped onions to them when it becomes golden.

 4. Add marinated vegetables to it and add fried cashews.

 5. Cook for 8-10 minutes.

    6. spread rice over the veggies.

    7. add Star anise(chukker phul), fried cashews, Fried raisins,             

         Fried onion handful on rice, mint leaves, and coriander leaves.

    8. Add rose water and kewra water in it, saffron milk.

    9. Add desi ghee.

    10. cover the pan with a lid and cook for at least 25 to 30 minutes.

   11. after that, serve the biryani on a plate.
