CHOLE  BHATURE

Chole Bhature is the most famous dish of  Northern India. Especially in areas of  Punjab and Delhi.



Recipe

Serving people:4-5

Ingredients for Chickpeas(chana)

·         500gm chickpeas

·         2 bay leaves, salt acc to taste

·         1/2 tsp turmeric

·         4 green chilly

·         4 onions

·         1 tsp garlic paste

·         1 tsp ginger paste

·         1 bowl tomato

·         1 tsp chana masala

·         1 tsp garam masala

·         1 tsp degi mirch

·         2 tea leaves

·         2 to 3 cloves

·         1 tsp cumin

·         1 tsp coriander seeds

 

Ingredients for Bhature

      ·    3 Cup Maida

      ·       3 Cup Curd

      ·       Salt

      ·       Baking Soda

      ·       Oil.

Boiling process of chana

·         First the 500gm chickpeas have to be soaked for 6 hrs.

·         After that for the boiling process put the soaked chickpeas in the cooker.

·         Add 2 to 3 tea leaves to bring color to it.

·         Add 2 to 3 cloves.

·         After 6 whistles the gas has to be turned off.

Tarka process of chana

·         Firstly add 2 tsp of oil.

·         Add 2 bay leaf

·         Add 1/ 2 tsp cumin, and coriander seeds.

·         After that add the onion puree and fry at 1-3 min.

·         Add 2 tsp garlic and 2 tsp ginger paste.

·         ADD 1 cup of tomato puree(tomato),

·         When it is fried properly.

·         Then add degi mirch, salt acc to your taste, chana masala,garam masala.

·         Cook till the oil is released from the chopping paste.

·         Then put chana in it.

·         Add 2 cups of water accordingly to the gravy.

·         After that put a whistle on the pressure cooker.

·         Then your chana will be ready

 

Serving  Process

When chana is ready then serve it in a serving bowl and garnish with fresh coriander leave and chopped ginger.

 

Preparation of dough for bhature

·         First take a big bowl.

·         Add 3 small cups of maida to it.

·         Then add 2 pinches of salt

·         2 tsp of rava.

·         1 pinch of baking soda.

·         2 small cups of curd.

·         Mix a mixture well.

·         Keep this mixture aside for 25 minutes.
